Revelation 1: Braised cabbage. OK, why has nobody told me that braised cabbage is so delicious?? And easy? And cheap? And perfect for winter greens???

Braised cabbage
Adapted from Cooks Illustrated.
1 T Earth Balance (nonhydrogenated margerine for flavor - or just use oil if you like)
1 pound green cabbage, cored and thinly sliced
1 T veggie broth (Better than Bouillon No-Chkn is good)
1 T fresh thyme (or, do as I did and throw in 1 tsp dried thyme instead)

Add Earth Balance and melt; then add 1 pound green cabbage, 1T veggie broth, 1T thyme. Bring to boil and stir, then cover, checking occasionally to stir, for 7-9 minutes or until cabbage is wilted but still light green. (I accidentally let mine go a little long and it got a little brown on the bottom. SO GOOD.) (Sneaky hint - 1/4t of sugar would probably also promote browning and contributes like 4 calories to the whole dish.)

I have so much CSA cabbage in my fridge - this recipe will be a life-saver!

Revelation 2: Steel-cut oats in the rice cooker!

DUDES. No standing over a pot and stirring, and no scorching. Brilliant!! I cut the suggested water in half, so that the ratio is one part cereal to two parts water (e.g. 1 cup cereal to two cups water), since there’s much less opportunity for water to evaporate in the rice cooker than on the stove.
