Tonight’s dinner:
Baked sweet potato
Pan-friend Gardein “chicken” piccata
Roasted green beans (rescued from a certain death in the fridge)
Mashed cauliflower with scallions (also rescued from certain death)
Many, many noms. I forgot how delicious and satisfying baked sweet potato is, especially the skin. SO GOOD. Doesn’t need anything on it, either.
Also baked up a carnival squash and spaghetti squash for later this week, and steel cut oatmeal in the rice cooker for breakfasts this week.
